Fun Monday


Mariposa is this week's hostess. Here is was she has asked us to do...



Next week's Fun Monday is easy, I'll only be asking TWO things -

First...the name of my blog...


It's pretty simple. Mi Vida Loca is spanish for My Crazy Life. With 3 small children, 2 of the autistic, you never know what the day is going to hold. Sometimes I just have to laugh at things that aren't really that funny just to keep from going crazy!!



Second...the favorite dish at our house is my homemade lasagna.


The problem with it being homemade is I don't really have a recipe, at least not for the sauce. It is my MIL's "recipe" which she really doesn't have either. Am I making any sense?? You see, I never really put the same ingredients in it twice. Every time it's different. Sure I always start with tomato sauce, then I add some Italian spices, oregano, garlic, onion powder. I never use the same amounts though. Sometimes I add butter, sometimes not. Sometimes chili powder, sometimes not. I could go on and on. Back to the lasagna...


I use three different kinds of cheese, mozzerella, cottage cheese (or ricotta), and cream cheese. Yes, cream cheese. It sounds kinda nasty, but it's really good. You should try it. When you are putting the lasagna together just throw some dollops in here and there. When you bite into one of the hunks of cream cheese it is just heaven!!

I made lasagna last week. Actually, the day before I found out the subject of this week. This is a picture of leftovers, so it isn't great. It looks much yummier when it is fresh out of the oven!!

But its your life, right? Does the blog help you stay connected with other people who share the same challenges--and joys?

Agree with you about the cream cheese in lasagna. Have an old time recipe that uses it also.

That lasagna look really delicious, and you are right, cooking is not an exact science you should always have some room to play!
The cream cheese is a lovely idea, I should try that sometime!

Mmm, that lasagne looks fab. And my life is crazy just with 2 kids, nevermind 3 such little ones and with autism added into the mix. They all look so gorgeous. You must be a complete supermum. :D

I'm happy to get the explanation for your name. I like it. It must really be a challenge raising children with autism but I think we're given the stregth to deal with what life throws at us. I hope your strength is growing day by day. And your lasagna looks yummy whatever the heck you put in there!

Looks really good to me! I haven't attempted to make homemade lasagna in about...oh, 20 years! OMG!! That's bad. I should make some next week..or maybe the week after ;)

Three boys, I bet your life is crazy and lasagna yum. I never make mine the same either just layer what is about the house.

The lasagne looks great. I think the cream cheese would be a good addition. I like cottage cheese in it too. Do you use eggs, sometimes I do?
I hope they come up with a breakthrough on autism. It seems to be rampant. Has it always been or is it just getting more coverage? What a hard thing to deal with, I hope you have all the grace you need for every day. :D

Though others close to me might claim I am anal, I attempt to be flexible, meaning - I plan to get me through a day, but in reality - I must adapt, which for most instances means a crazy, unpredictable day. I won't attempt to understand your typical day, but I can only imagine how unpredictable it can be - and in the same breath, applauding you for your patience and humor.
Oh and if you have time to make such a great dish, you have time to listen to me appreciate your efforts. See ya! NLM

You must be one incredibly efficient woman to be able to look after 3 little kids, be nursing one of them AND blog!

I really really really like lasagna but can never make it at home because I never have an oven in the places I stay. Maybe one day...

I am a horrible one for never following a recipe. Peter, much more scientific, thinks I should cook exactly to specifications the first time, then tinker. I think that's boring. :)

Cannot make lasagna, but my MIL makes a pretty good one and she adds a bit of creme cheese, too... Yummy!

My family said I should do lasagna for Fun Monday. Problem is that they have had me make it so much I'm a little sick of it! They also like it without the extra veggies I'd love to put in. (Shredded carrots and zucchini on top of the sauce layer is really good.) I'm going to give the cream cheese a try next time I make lasagna!
