I've been bad!!

This weekend hasn't been the best weekend I've ever had. Logan got sick Friday night. Braden got sick Saturday night. Abby is sick today. I am tired!! Sick kids can do that to ya!! Since I have had a rough time, I decided to do something really bad.


I made this cake for FHE. Actually if you want to get technical, it's more like family home afternoon!! :) It's the first time I have made it and it is wonderful. Just make sure you have milk to drink with it!!

Buttermilk Brownie Cake

for the cake:

2 cups sugar

2 cups all purpose flour

1/4 cup cocoa powder

1/2 cup vegetable oil

1/2 cup butter

1/2 cup buttermilk

1 tsp. baking soda

2 eggs, lightly beaten

1 tsp. vanilla

~Preheat oven to 400F. Grease a 15x10 in baking pan.

~Combine sugar, flour, and cocoa in a bowl. Mix well.

~Combine 1 cup water with oil and butter in a med saucepan. Bring to a boil. Add to the flour mixture and mix well. Add buttermilk, baking soda, eggs and vanilla. Beat well by hand and pour into the pan. Bake 20 to 25 minutes, until a toothpick comes out almost clean. Cool completely on a wire rack.

for the frosting:

1/2 cup butter

1/4 cup cocoa powder

1/3 cup buttermilk

1-1 lb. box powdered sugar

1 tsp. vanilla

~Combine butter, cocoa, and buttermilk in a saucepan and bring to a boil. Remove from heat. Gradually beat in powdered sugar and vanilla with a mixer at low speed. Spread evenly over the cooled cake.

I got this recipe out of our local newspaper on Sunday. There is an insert in there that usually has good recipes. Don't let the title fool you, it says 'brownie' but its not. I wasn't actually sure what to expect, a brownie or a cake. It seems more like a cake to me. On the recipe it also says, "serves 48". YEAH RIGHT!! Maybe 4 to 8!! Ha.

This is the first recipe I have posted. I may post more, I may not. I certainly don't want to compete with the likes of Cynthia, or the Pioneer Woman [even though I don't personally like her new site.] But, I hope that if you try it you will like it!!

See THIS is why I admire you so much. You can have your house turn-up side down, the sky could be falling, King Kong could be coming down your street and still would be able to manage to strive on and get whatever you need done, done. Nothing can stop you. you are a powerhouse!

Hey, this is Tenara King (Kenneth's wife) from church. I just thought I would say that the cake looks great. Thats my favorite dessert. Nothing like helping a bad day with some chocolate. I love your blog and your kids are precious!

I saw that recipe and asked the kids how many servings they thought my jelly roll pan held. We decided the 24 was a lot. if you cut it small. Our family of 8 considers all dessert recipes to be ...8 servings!

mm mm, I love brownies, esp. w/ milk.

And, I have to say, I don't care how many calories are in that thing, with sick kids you deserve the whole pan if you want.

Hope you guys get feeling better, and you get some catch up sleep, as soon as all that chocolate caffeine gets out of your system. :)

I don't know which one of my friends introduced me to Pioneer Woman, but I love her site.

Girl, you are so good! That cake looks delicious! Those pictures are going to haunt me ALL day. I must have chocolate! Lucky for me I have a private stash right here in my desk drawer.
I'm sorry about your kids. I FEEL your PAIN, though. It's hard to have sick kids. I tend to baby my kids at the beginning and then they get soooo demanding that I lose all sympathy that I ever had to begin with. Does that happen to anyone else?

That looks so good! I will have to try it out. And since I have two kids to nurse, I can justify eating the whole thing by myself-the boys need it, right?!?
